Oh the weather is getting so cold outside.. What to do to stay warm and healthy?

I am like a kid when it comes to cooking. There are specific seasons that I connect with specific food and I have made it so to myself that I kind of am allowed to cook these specific foods only during these specific times. Sounds weird? I know, it does that too to me :D But why I started telling you about this is, that when the weather starts getting colder and autumn has clearly arrived, I get really excited to finally get my soup pots out and start making all kinds of soups. â€‹

This Chicken Noodle Soup is something I have learned from my mom. It was always one of the soups that was kind of in our weekly meal rotation and it has stuck with me ever since. My mom always told me that a good soup, a flavourful soup with a delicious broth, is always made with meat that has a bone in it. So whether that is chicken, pork, beef or any other meat, it has to have some bone on the meat to make a proper broth. Then when you have that proper meat for the soup, you want to take time to make the broth. For that you just need to simmer the meat along with onions, celery and the spices for about an hour and you will see it makes such a big difference. Of course we do have ready made broths available now and even really good ones where you know there is nothing added to it, but to be honest, this is so simple to make yourself that I never think of skipping making the broth with this one.

I get asked often about cakes, what is my favourite cake and there I really struggle to answer, but if you would ask me, what is my favourite soup then this is it. Yes, there are other really delicious soups that I also make often and eat often, but none of them is made as much as this one. If I think why is that, I think the main reason is that this soup is like a warm blanket or like a hug, it just feels your whole body with this warm feeling and you feel better right away. I love making it to keep the cold away or as a cold remedy or just to get that lovely warm feeling during the cold winter months. â€‹

Homemade Chicken Noodle Soup

The best cold remedy

​INGREDIENTS

(makes about 6 portions)

​​

  • 2 medium white onions

  • 2 garlic cloves

  • 2 celery stalks

  • 2 medium carrots

  • 1 whole chicken thigh

  • 2-3 tsp salt

  • 10 black pepper pepper corns

  • 5 all spice pepper corns

  • 5 laurel leafs

  • 50g noodles (fast cooking)

  • 1 tsp dry thyme

DIRECTIONS

​

  1. Peel the onions and the garlics. Leave whole.

  2. Wash the celery well, remove the ends and chop into medium pieces.

  3. Peel the carrots and grate on a fine grater.

  4. Take a medium pot (3-4 litres), add in the chicken thigh, the onions and garlics, the celery, the salt, the pepper corns and the laurel leafs. Fill the pot almost full with cold water (leaving just a little room for when the soup is boiling). Cover with a lid and bring to boil.

  5. Once the soup has come to boil, reduce the temperature to low just to keep it simmering. Simmer for an hour.

  6. After an hour remove the chicken thigh, add in the noodles, the grated carrot and the dry thyme. Remove the skin from the chicken and shred the chicken meat. Add the chicken meat back into the pot. Cover with a lid an simmer for another 10 minutes.

  7. If the onion has stayed whole through the boiling, take a fork or a spoon and press it gently against the wall of the pot to brake it into smaller pieces.

  8. Taste the soup for salt and add more if needed.

  9. Remove from heat and serve while still warm.
