Weekend breakfasts are the best!​

What do you do when you feel homesick? Somehow I find myself cooking the food from back home whenever I get homesick. What is even more surprising is that it is not really the food that my mom used to cook for us, but it is traditional Finnish food that I know from school. Since we are living a difficult period of time at the moment and travelling is almost impossible, I am trying to find ways to not get overly homesick. I usually also travel home for holidays, which is not possible this year and so this makes me even more sad.. How has this whole situation been affecting you? Have you had to cancel something? How are you dealing with the changes it has brought to your daily life?

I must say I have been coping very well, well in my personal opinion :D ​But now that we are getting close to the end of the year and it has been over a year I have seen my family it is slowly starting to hit me. That is why I am trying to find different ways to cheer myself and I will be sharing those with you hoping they might also help you in some way. 

​

Todays â€‹"treatment" on a cold autumn day is a delicious pancake recipe from Finland :) This is something we were very rarely served at school, but when it was served, man, were we happy :) Typically this pancake is served with a homemade strawberry jam and a little whipped cream on the side. Oh, those sweet, lovely memories that flow into my mind with this recipe :) I served mine with a little yogurt and jam, as I am not a big fan of plain whipped cream, but you can top this pancake with any topping you would normally use for pancakes.

This is a simple, easy to make recipe with ingredients you probably always have in your pantry. It can be made ahead and stored in the fridge for a couple of days. I hope you will enjoy this recipe and will try it out :)​

RECIPE

Finnish Oven Baked Pancake

A great easy to make weekend breakfast

​INGREDIENTS

(makes 8 pieces)

​

  • 180g (1 ½ cup) all purpose flour

  • 1 tbsp sugar

  • 3-5 cardamom pods

  • ½ tsp salt

  • 50g (3 tbsp) butter

  • 500ml (2 ¼ cup) milk

  • 2 eggs

DIRECTIONS

​

  1. Start by melting the butter and allowing it to cool slightly.

  2. Grind the cardamom pods until they are powder like.

  3. In a medium bowl combine flour with sugar, salt and cardamom. Whisk shortly.

  4. Add butter to milk. Break the eggs into a small bowl and whisk to break the structure.

  5. Add the eggs to the dry ingredients and mix shortly. Then add a little liquid ingredients and whisk until you have a smooth thick paste. Add the rest of the liquid slowly whisking as you are adding to get a smooth batter. Leave the batter to proof for 30 minutes at room temperature.

  6. Cover a 34 x 24 cm (13 x 10 inch) oven proof baking dish with parchment paper and pour the batter over.

  7. Bake in the middle shelf of the oven at 225°C (435°F) bottom top heat for about 30 minutes or until beautifully golden.

  8. Remove from the oven and allow to cool completely before serving.

  9. Serve with a topping of your choice. Enjoy!

TIP. Can be made ahead of time and stored in the fridge. If storing in the fridge, allow to cool completely and the store in an airtight container. Last for a couple of days in the fridge.
