What to do with really brown and ripe bananas?​

​

Yes, I do mean as ripe as on the photo below. Sometimes you might think that the bananas are way too far, but as long as they have no mold on them, they are go to go for all kind of baking. I know, I know, banana bread is still the hype :) And to be quite honest with you, I do love banana bread myself. However, if you are looking for another healthy option to use your over ripe bananas for, then I have it for you here :)

These​ cookies are really a power snack for to-go as they are packed with oats that give you good carbs and they also have the nuts in them to provide you with some good oils and protein. Since this recipe has no sugar and the only sweetness comes from the bananas you really want to use bananas that are really ripe since those are the sweetest. Also I would really recommend using some kind of dried fruit as it also adds some sweetness and also flavour.

I am not going to tell you that these cookies will blow your mind with their taste, no. These cookies are more functional. They are really healthy and nutritious and a great snack to take to work or when you are on the go for long, so that you don't need to snack on some sugary or fatty store bought snacks. That being said, they are tasty and if you use the dried fruit you like and the nuts you like, you will definitely enjoy having these as your snack :) Yes, I am honest and I don't want to mislead you, even if it sounds like a really weird advertising for a recipe that I want you to try out :D

RECIPE

Healthy Snack Cookies

Oatmeal cookies packed with good nutrients

​INGREDIENTS

(makes 12 cookies)

​

  • 3 very ripe bananas

  • 1 egg

  • 1 tsp vanilla paste/extract

  • 30g all-purpose flour (about 2 tbsp)

  • 1 ½ tsp baking powder

  • 180g (2 cups) oats

  • 50-100g (¼ – ½ cup) cranberries/raisins/dates/dried apricots

  • 50g (¼ cup) pecan nuts/walnuts/almonds

DIRECTIONS

​

  1. Start by mashing the bananas with a fork.

  2. Add the egg and vanilla to the bananas and whisk until combined.

  3. In a separate bowl combine flour and baking powder. Then add to the batter whisking well until combined.

  4. Add the oats, the cranberries and the pecan nuts and mix well until everything is mixed in and you have no dry spots.

  5. Portion the cookies with an ice cream scooper or with a tablespoon to form 12 even cookies. Flatten the cookies a little with fingers dipped into cold water to stop them from sticking to the batter.

  6. Bake the cookies in 200°C (392°F) bottom top heat at the middle shelf of the oven for 10-15 minutes. Remove from the oven and allow to cool for about 10 minutes before removing them to a cooling rack to cool completely.
