I don't know about you, but I love quick and easy recipes for weekday lunches and dinners. Typically I have no time and it needs to be something that can be prepped and cooked in about half an hours time, but I still want it to be something delicious. This lemony asparagus salmon pasta is exactly that. Really quick and easy to make, but it has so much flavour in it.

It is asparagus season here currently and I really wanted to make something to honor the flavour of asparagus. My personal favourite is the green asparagus, as somehow I really enjoy the light bitter taste it has. That is probably also the reason why I like it cooked really light, for only a couple of minutes, so that it stays crunchy. However, as I mention in the recipe you can also cook it longer to your liking. As this is a quick a easy recipe I also cooked the salmon along with everything else. You could however cook the salmon separately and then cook it to have a crunchy crispy skin. You would then cook the rest of the pasta as instructed and add the salmon to the rest of the ingredients just before serving. As always just adjust the things that you want to your liking :)

A few other things I would like to mention that you can adjust are the white wine, so it is not a must. I added chilli, just a little though, but if you don't want to add even that then you can easily skip it. And the last thing, if you would like to make this recipe vegan, then you can leave out the salmon and make it just with the asparagus.

Lemony Asparagus Salmon Pasta

Quick & Easy weekday lunch


(makes about 4 portions)

  • 200g (2 cups) fusilli pasta or any of your choice

  • 2-3 big garlic cloves

  • ½ chilli

  • 200-300g (2 small salmon steaks) salmon

  • grated skin of ½ -1 organic lemon

  • 500g (1lb) green asparagus

  • splash of white wine (optional)

  • olive oil

  • salt & freshly ground black pepper to taste


  1. Cook the pasta according to the packaging instructions.

  2. Peel and slice the garlic finely. Slice the chilli. Cube the salmon.

  3. Heat a big pan over medium heat and once warm cover the bottom well with olive oil. Add the garlic and the chilli and allow the oil to infuse for a minute or two just until the garlic starts to lightly brown. Add in the salmon and cook from both sides shortly until it just changes the colour. Add asparagus, pasta with about 2 ladles of pasta water, splash of wine, lemon and season with salt and freshly ground black pepper. Continue cooking over medium heat until the liquid is almost reduced and the asparagus is cooked to your liking.

  4. Serve warm with some grated cheese on top.
