What is the best meat substitute?​

I know â€‹this might not be an interesting topic for everyone, but I have been looking into this more and more as I am trying to be more aware of what we eat. I am not planning on going vegan as I feel like it doesn't really suit me and my body. However, I feel like with our current meat consumption, we are not living a very healthy lifestyle. So I have decided to create more vegan alternatives that taste great so that we can bring more and more vegan meals into our daily menu. When it comes to cooking without meat I feel like sometimes it is hard to find a vegetable that has so much flavour that you can almost serve it with anything without having to add a lot of spices and so on to enchance the flavour. But I think mushrooms are definitely such a vegetable! And that is why I love substituting meat with them as they add so much flavour even if the dish, like the one I am sharing today, consists almost only from mushrooms.

The key in making these onion mushrooms is really giving those onions enough time for them to caramelize beautifully, as that is something that will add such a beautiful flavour to your dish. Also I love to add a little fresh thyme as I really like the flavour, but if you don't or you just can't get any, then you can also leave it out. Then once cooking the mushrooms, you also want to pay attention that you are frying them over medium heat so that they don't burn, but you want to do this without a lid, because otherwise they will start steaming in their own liquid and won't have such a strong flavour as when you slowly fry them over medium heat. Even if written that looks like a lot, it is really easy and quick to make :)

RECIPE

Onion Mushrooms

Perfect with pasta, rice or potatoes

​INGREDIENTS

(makes about 2-4 portions)

​

  • 2 medium white onions

  • 1-2 big garlic cloves

  • about 8-10 brown mushrooms

  • olive oil as needed

  • couple of branches fresh thyme or 1tsp dry thyme (optional)

  • salt and freshly ground black pepper to taste

  • small bunch of fresh parsley

DIRECTIONS

​

  1. Peel and finely slice the onions. Peel and finely dice the garlic cloves.

  2. Heat a big pan over medium heat and once warm cover the bottom well with olive oil. Add the thyme and the onions and garlic. Cook on medium heat while mixing once in a while until the onions have beautifully caramelized. If you will notice that the onions are cooking too fast or start turning too dark, reduce the heat a little. Also add some more oil if needed.

  3. In the meantime wash the mushrooms well and quarter them. Also chop the parsley finely.

  4. Once the onions have caramelized add in the mushrooms and continue cooking on medium heat until the mushrooms have cooked and also have a beautiful golden colour. Then remove from heat.

  5. Season with salt and freshly ground black pepper to taste, add parsley and mix well to combine. Serve warm as such or with pasta, rice or potatoes.
