Russian Salad - Salad Olivier

A Russian style Potato Salad

Whether it is Christmas, New Year or a Birthday on every Russian celebration table there is a Salad Olivier. I don´t know a single Russian person who doesn´t like this salad and so it is always present and everybody waits for the holiday season to finally eat this salad.

To be honest, I am not a fan of "only holiday foods" which are made only on special days and then you have to wait a year to eat them again. If you feel like having a stuffed turkey in the summer, then have a stuffed turkey in the summer! Why wait until Christmas.​

​

That is the case for me with this salad as well. Yes, I make it for Christmas and because I come from a Russian background, also for New Years. But I also make it whenever I crave it. So if it is summer and you just came across this recipe and you feel like having it, then just make it and don´t torture yourself by waiting until the holiday season. Try it out and then make it again on the holiday :)

RECIPE

Russian Salad - Salad Olivier

Russian style Potato Salad

​INGREDIENTS

​

  • 1 medium apple (sweet)

  • 1 medium onion (3 spring onions)

  • 200-250g Bologna sausage or any similar sausage

  • 2 medium carrots (boiled and cooled)

  • 10 medium potatoes (boiled and cooled)

  • 10-15 small gherkins

  • 4 hard boiled eggs

  • 140g canned green peas

  • 200g crème fraiche

  • 4 tbsp mayonnaise

  • salt

  • black pepper

DIRECTIONS

​

  1. Take a big bowl for the salad.

  2. Cube all ingredients into small cubes.

  3. Drain green peas from water and add to the salad.

  4. Add crème fraiche and mayonnaise . Season with salt and pepper to taste.

  5. Give the salad a good mix.

  6. Serve with some dark bread.
