Traditional Scandinavian Savory Celebration Cake

I do agree that holidays are for eating delicious food and not counting calories. However, I think it is great to have less heavy dishes on the table for a good balance. That is why I revisited my Scandinavian Sandwich Cake recipe and decided to make it into a lighter version and in Christmas edition.

The ingredients that go into this Sandwich Cake are lighter, but that doesn´t mean it is lacking flavour. There is a lot of flavor packed in this savory cake and it will definitely not leave you disappointed.

​

I decorated my cake to fit into the Christmas season, but don´t feel like you cannot make it for any other celebration or just a regular day that you feel like making a little special. Just change up the decoration and you have a savory cake that fits into any occasion.

RECIPE

Scandinavian Sandwich Cake with Tuna

​INGREDIENTS

​

  • 2 tins of tuna in water (about 400g) drained well

  • 1 red pepper

  • 1 cucumber

  • 5-7 spring onions

  • 6 large hard boiled eggs

​

  • 200g quark (fat free) or soured cream

  • 300g cream cheese with herbs

  • salt

  • black pepper

  • 15 slices of wholemeal toast

​

  • 300g cream cheese with herbs

  • 5 big tablespoonfuls of quark (fat free) or soured cream

  • cucumber

​

DIRECTIONS

​

  1. Start by cutting all the ingredients for the filling, add tuna and mix well.

  2. Add quark and cream cheese. Season with salt and black pepper. Mix well until everything is combined.

  3. Take a serving plate (35x25cm) or cover a cutting board with aluminium foil. Lay three pieces of toast on serving plate side by side and spread over a thin layer of the filling (about 4-5 tablespoons). You can spread the filling with a knife so it spreads evenly.

  4. Cover the first layer with another three pieces of toast. Repeat until you have made all the layers. The top layer does not need to be covered with the filling.

  5. Cover the cake with cling film and refrigerate overnight.

  6. Mix 300g cream cheese and 5 tablespoons of quark. Mix well until you get a nice spreadable consistency. Cover the cake using a knife or a cake spatula.

  7. Prepare decorations and decorate the cake.

  8. Serve chilled.

  9. If you are not able to find quark where you live, then you can also use fat free cream cheese or low fat sourec cream instead.
