What are your thoughts on Valentine´s Day? Are you pro or are you against it? Having lived most of my life in Finland, I was not spoiled with Valentine´s Day being a day celebrating love between partners, since in Finland it is not Valentine´s Day, but rather friendship day. I think this is great, because there is no other day celebrating friendship and also rather than everyone having a partner, everyone has friends. But then also, I am an absolute succer for romantic things and Valentine´s Day is the ultimate day for all romantics. So in a way I was always dreaming of celebrating Valentine´s Day the way it is celebrated all over the world.
When it comes to celebrating Valentine´s Day I still don´t like the fact that this day has been so commercialised (as most of the holidays are these days) and so I am not for giving expensive presents on this day. Rather I think it should be showing your love with gestures like making that favorite breakfast, cooking lunch or dinner together, or making a sweet homemade surprise. And that is how we come to these cupcakes.
The DIY cupcake toppers with kisses make these little sweet treats very personal and precious to your special person. They are very easy to make and you don´t need any special equipment to make them. You can find the tutorial in my Box of Kisses Cupcakes video.
For me it is those little things that make a cupcake beautiful, like those DIY cake toppers that go well with the beautiful paper muffin liners. They are still pretty simple, but simple things can also be beautiful :)

RECIPE
Box of Kisses Cupcakes
A very personal sweet present that will bring a smile to your special someone´s face
INGREDIENTS

85g butter at room temperature

170g sugar

2 medium eggs

210g flour
-
1 ½ tsp baking powder

90ml kefir or buttermilk
-
1tsp vanilla extract
-
100-150g canned/preserved sweet cherries or cherry jam

130g cream cheese
-
130g butter softened (at room temperature)

130g whipping cream (whipped until stiff)

4-5tbsp of powder sugar/icing sugar
DIRECTIONS

Beat butter and sugar with a hand mixer or standing mixer until pale and creamy consistency, for 3-5 minutes.

Add eggs one at a time and mix well after each addition for about a minute.

Sift flour and baking powder in a separate bowl. Combine kefir and vanilla extract.

Turn the mixer to medium. Mix one third of the flour mixture into the egg and butter mixture and mix well. Add one third of the kefir and mix well. Continue until you have combined all ingredients.

Place 10 paper muffin liners onto a baking tray and divide the batter evenly between them.

Bake the cupcakes in 180°C bottom top heat at the middle shelf of the oven for about 25 minutes. Test if cupcakes are ready with a wooden skewer. If the skewer comes out clean the cupcakes are ready.

Remove from oven and allow to cool completely.

To make the frosting whisk the softened butter with a hand mixer for about 5 minutes until pale and fluffy. Add cream cheese and whisk shortly. Then sift in the powder sugar and fold it in with a spatula. Whip the whipping cream in a separate bowl until stiff, add to the rest of the ingredients and fold in with a spatula until you have a smooth frosting.

Cut out a piece from the centre of the cupcake with a cupcake plunger or with a round piping tip. Add some cherries into the hole that formed and cover with the cut out piece.

Transfer the frosting into a piping bag and pipe on top of the cupcakes.
