Very Chocolatey Brownie Cheesecake

Brownie or Cheesecake? Brownie...or Cheesecake..? What if you didn´t have to choose :)​

Do you â€‹ever have those days when chocolate is all you can think of? Like, you are making breakfast and have a bowl with some granola and fruits, and then you hear this distant whisper "chocolaaate".. Hmm, what was that? You have your breakfast and proceed to your daily routine, when the lunch time comes closer and you hear it again "chocolaaate".. Am I crazy? Is it just me? Or do you also hear it? :) Well, it was one of those days and I was lucky to havesome dark chocolate in my pantry along with some delicious chocolate cream cheese. So my thoughts went like, cheesecake, or brownie.. cheesecake.. no, maybe brownie? But why choose when you can have both! And that is exactly what I did and so this super chocolatey, gooey brownie cheesecake was born.

Even​ though I do love everything very very chocolatey I also like to balance it out with some fresh flavours. That is obviously something up to each and every one and you should stick to what feels right for you. To satisfy my taste buds and make it up to my liking I also added some fresh berries on top of the cheesecake topping and served my brownie cheesecakes slightly warmed with some greek yogurt on top. If you are like me you can do as I did or you can also leave the berries unbaked and serve with fresh berries on the side. Also as a substitute for the yogurt you could use sour cream or creme fraiche. However, if you don´t need all that and want to keep it as a pure chocolate goodness, you can do that and you can also serve with some vanilla or chocolate (omg, yes!) ice cream on top.

There is something I always do when I make a brownie and I think it is a must to get thta perfectly gooey consistency. When you have baked the brownie, you want to allow it to completely cool in room temperature and then chill it for at least a couple of hours in the fridge. After you have chilled the brownie it is much easier for you to cut it into beautiful serving pieces without it falling apart. However, now it is very dense, which I know some also like, but I really love the gooey and soft brownie texture. To get that you need to take the brownie pieces and warm them really shortly for about fifteen seconds in a microwave (800W). That is when they are at their best. Then just choose your topping and get ready to enter the brownie cheesecake heaven :)

RECIPE

Very Chocolatey Brownie Cheesecakes

The chocolate lovers dream

​INGREDIENTS

​

  • 100g butter

  • 100g dark chocolate (minim. 70% cocoa)

  • 150-200g sugar

  • 3 eggs

  • 80g flour

  • 70g cacao

​

  • 350g chocolate cream cheese or natural flavour cream cheese at room temperature

  • 1 egg

  • 40g flour

  • fresh berries (optional)

DIRECTIONS

​

  1. Chop the dark chocolate into small pieces.

  2. In a small pot over medium heat melt the butter with the dark chocolate until both have completely melted and you have a silky chocolatey mix. Remove from heat, transfer into a different bowl and allow to cool slightly.

  3. Once slightly cooled, add the sugar and whisk in shortly with a fork. Then add in the eggs and whisk again until well combined.

  4. In a separate bowl combine flour and the cacao powder and sieve into the wet ingredients. Fold the dry ingredients into the wet ingredients with a spatula until all well combined.

  5. Butter a square (20cm x 20cm) baking tin and cover with some parchment paper. Transfer the brownie batter into the cake tin and even out to cover the whole bottom of the pan.

  6. To make the cream cheese topping, soften the room temperature cream cheese shortly with a fork. Add in the egg and whisk well until combined. Then sift in the flour and continue mixing with a spatula until you have a smooth mix with no bits of flour.

  7. Pour the cheesecake topping over the brownie base and even out. Decorate with berries on top.

  8. Bake the cheesecake in 180°C bottom top heat in the middle shelf of the oven for about 40 minutes.

  9. Remove from the oven and allow to cool completely on a cooling rack before cooling further in the fridge for at least 2-3 hours.

  10. Cut the brownie cheesecake after cooling and heat shortly (800W 15 sec.) in a microwave before serving.
