Homemade Iced Coffee Popsicles

Great for those hot summer days

During summer time, I like my coffee iced :)​

Oh I have been waiting so long to film this recipe! I got this popsicle mould end of last autumn and I have been waiting since then for the summer season to come so I can start creating, filming and sharing some delicious summery popsicle recipes. Since I have been really hooked on coffee lately, since we bought our espresso machine, I thought I am going to start my summer popsicle series with a delicious coffee popsicle recipe :)​

In this recipe I have a couple of things you might want to adjust. The first thing is the amount of coffee I used for each popsicle. Since I don't like really strong coffee and I didn't want these popsicles to be something that you won't be able to enjoy at late night, being afraid you won't sleep afterwards, I decided to go with just half an espresso shot for each popsicle. However, if you are not as strongly affected by caffeine or if you just want the popsicles to have a stronger coffee flavour then adjust the amount to your liking. The second thing is the alcohol. I wanted to make these boozy as I have been hooked on this Baileys Espresso Creme Liqueur and I really wanted to add some of it. I didn't add a lot, so that the popsicles won't be too much, but I wanted the flavour and the creaminess from the Liqueur. And the last thing is the milk, since I don't drink regular milk anymore I used my favourite oat milk. However, you can use the milk that you drink or a combination of milk and cream. I am a strong believer that recipes are there to guide you and especially with recipes like these, where you can't really do much wrong, you can easily adjust to your liking so it fits your taste.

RECIPE

Homemade Iced Coffee Popsicles

Great for those hot summer days

​INGREDIENTS

(makes ten 90ml/3oz popsicles)

​

​

  • 5 single shots of freshly brewed espresso

  • 5 shots of Baileys Espresso Creme Liqueur (optional)

  • milk or half milk half cream (about 800ml/27oz)

  • chocolate chips (optional)

DIRECTIONS

​

  1. Brew the coffee and allow it to cool slightly.

  2. In a medium jug mix the cooled coffee and the liqueur. Fill the rest with milk to reach 900ml (or the amount your popsicle mould fits). Mix again shortly to combine.

  3. Carefully pour the coffee popsicle mix into the popsicle mould. Freeze for 1-2 hours, then attach the sticks and add some chocolate chips on top. Freeze at least overnight before serving.

  4. To remove the popsicles from the mould you might need to hold the mould under warm water shortly. Make sure the water is pouring only onto the plastic and not into the moulds.

  5. Enjoy!
