Healthy oven baked chicken nuggets

Super crispy and still healthy? Yes, exactly!​

​

There â€‹are so many foods that are considered fast food and unhealthy because of the way they are commonly prepared. That is also the case with chicken nuggets and that is why I stopped eating them a long time ago. As a kid, I remember it was a once in a month or so treat. However, my mom bought them in the store and fried on a pan with just a little oil. So they were not that unhealthy, but also not healthy. Those store bought chicken nuggets tend to have nothing to do with real chicken meat, it is mostly just some by-products or waste that is grinded into this smooth mince (or paste like I would call it) and that´s it. When I realized or well, when I heard about that, I didn´t feel like eating them anymore :D

For â€‹such a long time I have been looking for a way to bring those delicious little dipping goods back into my life.. I have been craving them so bad, but I really wanted them to be perfect. There were many trial recipes with bread crumbs and with some oli drizzled on the baking trey, which both were resulting in quite delicious nuggets, but the crispy crunchy outer layer was missing.

We have used cornflakes already before while making this kind of crispy layer for meat, but somehow I never thought of using it for nuggets. Would you believe me if I would tell you that in the end the successful recipe was born by an accident? :D Yes, I did plan the cornflakes, as otherwise I would have not had any at home as we don´t eat them just like that. But what I did not plan was the way I crushed the cornflakes and the way I forgot the oil.. :D I wanted to be ready faster, so I took a plastic bag, threw in some cornflakes and just crushed them with my hands, just a little so I get some finer crumb and some larger. Yeah, lets just leave it like that, it should work :) Then while filming I was so concentrated with getting all the separate steps filmed that I forgot the oil before arranging the chicken nuggets over a baking trey.. Oh well, lets just make them without oil and see what happens..

It is unbelievable how these two things resulted in what I have been looking for for such a long time! I have tried and tried, and the one day I don´t and even more, forget half of what I wanted to do, it works like magic. Funnily enough I am both happy and a bit frustrated! :D Maybe I should just not try and it will magicly work every single time.. :) Naaah! Better not dream silly :D

The jokes aside, it was so amazing to finally get what I was looking for and in such a healthy form, oven baked and with no fat or oil included whatsoever. I am so excited and I really really want you to try it out, because I am sure you will be smiling once you take that first crunchy bite :)

I used quite a lot of different seasoning for this recipe, but if you don´t have some of it available, just improvise and use whatever you like :)

RECIPE

Crispy Oven Baked Chicken Nuggets

Go healthy and never look back

​INGREDIENTS

​

  • 200g cornflakes (plain)

  • 6tbsp flour

  • 1tsp salt

  • 1tsp dry garlic

  • 2tsp tandoori masala

  • 1tsp curry

  • 1tsp paprika

  • 2 eggs

  • ½ tsp salt

  • ½ tsp dry garlic

  • ½ tsp black pepper

  • 600g chicken breast

​

DIRECTIONS

​

  1. Take a medium plastic bag and add some of the cornflakes to it. Close the bag and crush the cornflakes with your hands just so that some of them are crushed but you also have some big pieces in there. Those big bits will be the really crunchy parts, so you don´t want to crush them all. Transfer the crushed cornflakes into a medium bowl.

  2. In another medium bowl mix the flour with salt, dry garlic, tandoori masala, curry and paprika.

  3. Break the eggs into a small bowl and season with salt, dry garlic and black pepper. Whisk well with a fork until everything has combined and you have no lumps of seasoning.

  4. Prepare the chicken by cutting little square-shaped pieces. Make sure that the pieces are not too big and also not too thick. (See video)

  5. To ease the process I would suggest to first coat all of the chicken pieces in flour and only then start dipping them in the egg and covering with cornflakes. (See video)

  6. Cover a baking tray with aluminium foil (not a must, but helps with cleaning afterwards) and arrange the chicken nuggets over the baking tray a little apart.

  7. Bake the chicken nuggets in 200°C bottom top heat at the medium shelf of the oven for 20 to 25 minutes until the chicken nuggets start to golden.

  8. Enjoy warm right away with a dip of your choice.

TIP. Make just enough to eat fresh. The chicken nuggets will lose their crunch if eaten on the next day.
