Delicious & Easy to Make Oven Baked Salmon with Cream

I have been asked to bring here more savoury recipes and I will be trying my very best to do that. I know it is very sweet-recipe-dominant here, but hey, girl´s gotta do what girl´s gotta do :D But to be absolutely honest with you, the problem here is that I rarely get the time or take the time to film my savoury recipes. Usually I need something quick to eat along with the busy days and that means there is no time for filming or photographing. But I will try my best to change this in the future, even if at the beginning that might mean one savory recipe per week, but at least that will be a start :)

When it comes to fish, I must say for a long time the only fish I ate was salmon. Maybe that is something that has been affected by the fact that having lived in Finland I was spoiled by the great availability of salmon and also by the fair prices. Also I don´t really remember having any other such fish available.. Maybe it was just me being blind to just seeing salmon or maybe were I was it was just that way. I can assure you, this has changed since and I do enjoy eating other fish as well now, now that I have tried many different ones, but I must admit, salmon is still my favorite :) That is also why most of my fish recipes will probably be with salmon and I hope you will not mind that :)

This specific recipe is what I make when I use frozen salmon, with fresh salmon I like to keep it even more simple as I think the fish itself tastes amazing and doesn´t really need anything to kind of make it better. The frozen fish in my opinion needs something to make it fancy and so I make it with some cream and herbs and a side of delicious mash and oven baked tomatoes, because hey, oven baked tomatoes are simple amazing! Also this is the way my mom used to make and still does make salmon at home and I have always really enjoyed eating it this way.

RECIPE

Oven Baked Salmon with Cream

Something delicious for lunch or dinner when it has to be quick

​INGREDIENTS

​

  • 250-300g salmon (I use frozen)

  • cherry tomatoes

  • about 100g of cream (30% fat)

  • salt

  • pepper

  • fresh dill (alternatively can also use frozen)

 

  • 5-6 medium potatoes (starchy)

  • about 5g butter

  • some milk

  • salt

  • 1tsp horseradish cream

DIRECTIONS

​

  1. If you are using frozen fish, defrost it first before starting with the recipe. I use thin frozen salmon filet's that are separately packed in plastic wrap and I defrost them in a bowl with cold water for about an hour.

  2. Once the salmon has defrosted, take an oven proof dish that fits the salmon filet´s and place the filet´s in the dish. Wash the tomatoes and place around the salmon. You don´t need to remove the green parts at this point as they will look nice when plating the dish. Pour over some cream so that the salmon is covered to about half but not completely. Season generously with salt and pepper and add some dill on top. Bake the salmon in 180°C bottom top heat in the middle shelf of the oven for 20-30 minutes depending on the thickness of the filet´s.

  3. While the salmon is baking you can prepare the mashed potato to go with it. Peel the potatoes, cube them and boil them in salted water until soft. Drain the water and add about 5g of butter. Allow the butter to melt shortly before you start mashing the potatoes. If needed add a little milk to make the mashed potato softer and creamier. Once you are happy with the consistency of the mashed potato add the horseradish cream, mix it in well, taste for salt and season with some salt if needed.

  4. Serve the warm baked fish with the mashed potatoes. Add some of the cream from the bottom of the baking dish on top of the salmon when serving.
