Homemade healthy and delicious granola? What could be better :)​

I am stuck with my jar of peanut butter and I seem to be adding it everywhere I can.. I think I have a peanut butter problem if I am absolutely honest with you.. But I don´t care, because it has brought me so many yummilicious recipes :) â€‹

It was a Sunday night and I had my usually problem of deciding what I want for dinner. Anyone else have this problem of wanting to eat but not knowing what? :D I really wanted something light that night and the idea of a granola popped into my mind. I don´t like store bought granolas as they are packed with so much sugar which I think is really unnecessary for something like granola that should be healthy rather than sugary.  That is why I never have any store bought granola at home. I remembered my chocolate cocout granola recipe and thought I will make that. When I started getting my ingredients out of the cupboards, I saw it, the jar of crunchy peanut butter.. :) Love at first sight! :D I instantly changed my mind and decided it is going to be peanut butter granola and it calls for a new recipe. Half an hour later, I had a new delicious granola recipe and a full tray of homemade peanut butter granola.​

You might be thinking, but peanut butter has a lof of sugar in it. Yes it does, if you buy the regular one from your local store which has all kinds of things added to it. I made the transition about two years ago to a pure peanut peanut butter, which has only one ingredient, the peanuts. If I want to make it sweet I can,  but if I want to keep it healthy, I also have that option. The brand that I have been buying for these two years is MyProtein and you can find the exact one I used for this recipe here. I have also tried the smooth one from the same brand, but I personally like it more when it is with those peanut bits.

If all of the above didn´t assure you then I am going to say one more time :) Making your own granola is really easy and fast, it allows you to make any flavour that you like and control the sugar and fat that you add to it. It is a great breakfast cereal substitute and I must say, once I started making my own I have not looked back :)

RECIPE

Healthy Peanut Butter Granola

A delicious granola that you will want to eat every single day

​INGREDIENTS

​

​

  • 200g rolled oats

  • 100g raisins / 3tbsp honey

  • 1tsp vanilla paste/extract

  • 3-4tbsp peanut butter

DIRECTIONS

​

  1. Add all ingredients into a medium bowl and mix well with your hands. Start with three tablespoons of peanut butter and if the granola looks too dry, add another tablespoon. This granola is pretty dry even when you add four tablespoons of peanut butter and you want to keep it that way, don´t add too much. (See video)

  2. Cover a baking tray with parchment paper and spread the granola mix evenly over the parchment paper.

  3. Bake the granola in 150°C bottom top heat at the middle shelf of the oven for 7 minutes then mix a little and bake for another 7 minutes.

  4. Remove from the oven and allow to cool completely.

  5. Store the cooled granola in an airtight glass jar or a container.

TIP. If you don´t like raisins you can substitute with honey to give the granola some sweetness (see measurements in the ingredients list). You could also leave both the honey and the raisins out but then the granola will not have any sweetness to it.

TIP. If making a double portion, make sure to use two baking trays for baking the granola.
