Plum Cheesecake Pie

A delicious combination of sour plums, creamy cheesecake and sweet crumble

Every season has its beauties and I love that the plum season has already started over here :)​

​have been telling you a lot about our garden and I want to tell you a funny story. We got the garden with many big fruit trees, but because we got it in autumn and I am no expert, we were not sure what all of those trees where. The summer came and most of the mystery was revealed. However, there was one big tree in the middle of the garden that I was sure was no fruit tree. Then we had some friends over for a barbeque and I was showing them around and telling that "here is another tree, but we don´t know what it is". My friend looked at me and said, "hey, look, there are some green fruits on it". That is the moment I found out we have a plum tree :D Yes, that is how "good" I am with the garden, but I told you I was a beginner, right? :)

So,​ I kept an eye on those plums and the moment they got purple I picked them and decided to make a pie with them. There is one pie that I always make when I don´t have much time, my Finnish Blueberry Pie, but what I do is I make it with different fruits or berries every time. This time I thought I would make it with those plums I got from the garden :) Because the plums we have are quite sour I decided the pie needs something to make it a little sweeter and so I decided to add to it the crunchy and sweet crumble topping. I know I mentioned that Blueberry Pie above and I do love it, but this combination of the sour plum with the cheesecake filling and the crunchy crumble was really priceless! And I am planning to make it again very soon :)

I did mention above that the Finnish Blueberry Pie that inspired this Plum Cheesecake Pie is a recipe I go to when I need to make something fast. That also means that this recipe is very fast to prep and also very easy to prep. I think it took me no more than thirty minutes and the pie was in the oven :) Give it a go and you won´t regret it! :)​

If you don´t feel like making the crumble topping (which I would not really suggest as it is YUM!) you can also make the pie without it and serve with some vanilla ice cream or vanilla sauce on top.

Plum Cheesecake Pie

A delicious combination of sour plums, creamy cheesecake

and sweet crumble

​INGREDIENTS

​

  • 100g butter at room temperature

  • 80g sugar

  • 1 egg

  • 100g flour

  • 15g oats

  • 1tsp baking powder

  • 500g quark or ricotta

  • 60g sugar

  • 1 egg

  • 1tsp vanilla paste/extract

  • 150-200g plums

 

  • 50g butter

  • 50g sugar

  • 70g flour

DIRECTIONS

​

  1. Cream butter with sugar with a hand mixer first on the low setting and then on high until combined and creamy.

  2. Add the egg and mix until well combined.

  3. Combine all dry ingredients together and add to the butter mixture.

  4. Mix with a hand mixer on low setting just until combined.

  5. Butter a 26cm pie pan and press the batter into the pan evenly. You can start spreading with a spatula and then even out with floured fingers. (See video)

  6. In a medium bowl combine quark, sugar, egg and vanilla, and mix until all well combined. Spread the quark filling evenly over the base.

  7. Wash and de-stone the plums. Arrange the plum halves over the quark filling.

  8. To make the crumble topping, add cold butter, sugar and flour to a medium bowl and mix shortly with your hands until the crumble forms. (See video) You can alternatively pulse all the ingredients for the crumble in a food processor.

  9. Sprinkle the crumble evenly over the plums.

  10. Bake the pie in 175°C bottom top heat at the bottom half of the oven for 45 minutes. Let cool completely before serving.
