It's time for some autumn salads! :)

We are saying goodbye to all those spooky Halloween recipes and getting ready to greet some more autumnal recipes along with Thanksgiving recipes. I am really excited, even though we don't celebrate Thanksgiving here in Germany. I want to be able to share with all of you some great recipes both traditional and non-traditional. I have done a lot of research and I am ready for this culinary adventure :) I hope to have you join me :)

This recipe might not scream Thanksgiving to you, but I think it is a great healthy side option for those looking for such. Also this salad is packed with autumnal flavours like the seasonal sweet apples, the crunchy red cabbage and the lightly sour fresh cranberries. I love this combination of flavours and I really enjoyed eating this salad. â€‹

The reason why I decided to go on and make this salad was actually, because I had this beautiful red cabbage from our garden and I wanted to use it for something that fits perfectly into this holiday season. I do like cooking with red cabbage and I will share some recipes like that as well, but when it comes to own grown produce, I find it hard to choose cooking over eating fresh. All own grown produce tastes so amazing, like this cabbage was really crunchy, juicy and packed with flavour. I thought it would be a shame to use it all for cooking and not enjoying any of it fresh. And I didn't regret that at all, as this salad turned out to be so delicious. If you enjoy everything with crunch then you will absolutely love this salad :)

RECIPE

Crunchy Red Cabbage Salad

A healthy and flavourful autumn salad

​INGREDIENTS

​

  • 1 medium white onion

  • ½ red cabbage

  • 1 lemon

  • 1 sweet apple

  • 2 handfuls of fresh cranberries

  • 1 small stalk of celery (optional)

  • big handful of walnuts

  • 2 tbsp olive oil

  • 1 tsp honey

  • salt

  • black pepper

DIRECTIONS

  1. Peel and slice the onion really finely.

  2. Wash the cabbage and remove any bad outer leafs. Half the half of the cabbage and remove the hard centre. Slice the cabbage finely.

  3. Take a medium bowl and fill it with some cold water. Half a lemon and squeeze the juices into the water. Peel and de-seed an apple. Slice the apple finely and then slice those slices to make thin stripes of apples. Add the apple stripes directly into the bowl of lemon water. This will prevent them from browning.

  4. Wash the cranberries and half them.

  5. Wash the celery, remove the ends and slice finely.

  6. Chop the walnuts roughly.

  7. Add all of the vegetables and the walnuts into a big bowl and mix shortly with your hands.

  8. Combine olive oil with honey and season with salt and pepper. Mix shortly and add the dressing over the salad. Mix the salad well to cover it with the dressing.

  9. Serve right away.
