Appetizers, in or out?

​

I have never been an appetizer kind of person. Why? Because it is not really a thing where I come from. However, with the internet becoming more popular and cultures from all over the world being more and more accessible to us, I have found myself totally in love with appetizers. I make them for birthday parties, for Christmas and New Years and even for movie nights. I think appetizers are a great way of substituting snacking like crisps and sweets with something more complex and flavourful and even more healthy (not always, but mostly).

Since my recipe collection is really lacking on appetizers I decided to dedicate January to creating a lot of different party appetizers that are all really easy and simple to make and that will mostly include some kind of a vegetable or a fruit as the main ingredient. So if you enjoy making appetizers, then oyou might also want to check the other ones out as well (you can find them on my YouTube channel).

Today I want to share with you two delicious and also really easy to make stuffed peppers appetizers. One of these is baked and has bacon in it and the other one is served raw and is also suitable for vegetarians. If you don't have any food restrictions then I would suggest to try out both as they are both great in their own way :) The ones with bacon are a real treat and the ones with the feta dip are really fresh and clean.

Stuffed Peppers Appetizers

Easy party appetizers

​INGREDIENTS

​

  • 200g (about 10 small) snack peppers

  • 150g (3/5 cup) natural flavoured cream cheese

  • 1 small red onion

  • 100g (½ cup) feta cheese

  • 200g (about 10-20 small) pimientos/padron peppers

  • (or any other small peppers)

  • 150g (3/5 cup) natural flavoured cream cheese

  • a small bunch of chives

  • 1 garlic clove (optional)

  • 100-150g (10-15 slices) bacon

  • salt & freshly ground black pepper

DIRECTIONS

​

  1. Wash the peppers well, half them and remove the seeds.

  2. Finely dice the red onion, chop the chives and finely dice the garlic or press it through a garlic press.

  3. For the vegetarian peppers combine the cream cheese with the red onion, half of the feta cheese and season well with freshly ground black pepper. Then mix with a fork until well combined. Spoon the stuffing into the peppers, decorate with the rest of the feta cheese and some chives.

  4. For the bacon peppers combine the cream cheese, garlic and chives and season well with salt and black pepper. You don't need to add much salt as the bacon will also add a bit of saltiness. Spoon the stuffing into the peppers, cut the bacon slices into thirds and wrap the peppers with the bacon. Lay the peppers on a baking tray covered with parchment paper and bake the peppers in 200°C (390°F) bottom top heat in the middle shelf of the oven for 20-30 minutes depending on the size of the peppers.

  5. Serve the vegetarian stuffed peppers freshly made and the bacon peppers warm out of the oven.
