Summery Watermelon Salad

Perfect salad for summer barbecues

Are you looking at that photo and thinkig "is that feta cheese and watermelon?", yes it is :) And if you are in doubt and thinking this can be no good, then I must tell you, you are wrong :) I was very unsure myself at first, but once I tried it, it became my favorite summer salad. All I did last summer is eat this salad for lunch and for dinner, with some grilled meat on the side or just as it is. Either way it is a great and very refreshing summer salad and the combination of flavors is like something that was always meant to be served together.

In the summer, especially when it is really hot, I find it very hard sometimes to motivate myself to cook, especially warm meals. Also I find that I am not as hungry during those days and am rather looking for light options than something heavy. For those days this salad is perfect, because it requires minimum effort, it is very refreshing and it will keep you satisfied. It is a light salad however, even if there is the cheese, so it really is meant as a side salad or for a light lunch or a dinner. I loved making it for our family barbecue get togethers, as with all the grilled meat you need something very light and refreshing to go along and this salad is exactly that.

RECIPE

Summery Watermelon Salad

Perfect salad for summer barbecues

​INGREDIENTS

​

  • about 330g green salad (I used iceberg lettuce)

  • about 900g watermelon

  • 200g cucumber

  • 200g radishes

  • 200g feta cheese

  • 1-2tbsp olive oil

DIRECTIONS

​

  1. Wash the salad well and tear the salad leafs into bite sized pieces. Add to a large bowl.

  2. Cut the watermelon, remove the skin and the seeds and cube the watermelon into fairly big pieces. Add to the bowl with the salad.

  3. Wash and cube the cucumber and add it to the bowl.

  4. Then wash the radishes well, remove the ends and cut them into fours. Now also add them to the bowl.

  5. Crush the feta cheese with your fingers into the salad and drizzle over 1-2 tablespoons of olive oil.

  6. Give the salad a good mix to mix through the ingredients. Serve right away.

  7. Since this salad has much flavor from the ingredients in it and the saltiness from the cheese, it is not necessary to add any extra seasoning to it. However, taste it before serving and if you think it needs some salt or some pepper then add some in.
