The breakfast you will want to eat every weekend

Everyone loves weekends, right? You can enjoy the time off and relax, spend time with family and friends or go for a little weekend trip. There is one more thing that I absolutely love about weekends and that is the weekend breakfast. During the week I rarely have the time in the morning to get creative and make something special, so it usually means porridge or a quick toast. But during the weekend I love taking the time and making something special to start the weekend right :)

Now, pancakes are fairly quick to make and what is really great about them is that you can then serve them with a bunch of different toppings so that everyone can make something that fits their own taste. Also you can have one with a chocolate topping, one with maple syrup, one with yogurt and berries..I think you got what I mean :) Looking for ideas for homemade toppings? My Homemade Lemon Curd is a perfect accomponiment to greek yogurt and fresh berries on pancakes, not forgetting the finger licking good Homemade Caramel which is great on its own to go on pancakes.

Even if I just said that pancakes are perfect for the weekend, I also think they are a great dessert to end a lunch or a dinner with your family or friends. I guarantee everyone will be super excited to construct their own pancakes with the toppings of their choice, been there done that, and did see some very happy faces :) I think even adults get a little child like, when they get excited about something like this and I think that is priceless :)

My favorite topping for pancakes must be greek yogurt and fresh seasonal fruits, and when there are no fruits then it is maple syrup or caramel :) What is your favorite topping?​

RECIPE

The Fluffiest American Style Pancakes

The Breakfast you will want to eat every Weekend

​INGREDIENTS

​

  • 2 eggs separated

  • 150ml kefir or buttermilk

  • 100g flour

  • 1/2 tsp baking powder

  • Oil for frying

DIRECTIONS

​

  1. Whisk the egg whites with a hand mixer until stiff.

  2. Then whisk the egg yolks in a separate bowl for a little. Add kefir to the eggs while mixing.

  3. Now you can start adding the flour little by little while mixing continuously. Mix the batter well to get a smooth, lump-free batter. The batter will be quite thick.

  4. Fold in the egg whites with a spatula, carefully, to retain the airiness.

  5. Heat a frying pan on medium heat and oil it well once hot. Spoon the batter with a tablespoon onto the frying pan.

  6. Fry the pancakes over medium heat for 1-2 minutes until they are brown and then turn them over and fry for another minute on the other side.

  7. Enjoy warm with any topping of your choice.
