Apple Muffins

They say "apple a day keeps the doctor away", does that apply to apple muffins as well? :)

I​ am finally getting over the pumpkin recipes slowly and starting to recognize the other autumnal produce that there is currently available. I think apples are so under rated when it comes to eating them and cooking with them. Even if I think about myself, it is mostly other fruits that I tend to buy and apples are usually left behind. However, I have decided to appreciate them more and try to create more recipes with apples this year :) And since the apple season is currently in full boom here in Germany it is just about time to get my creativity running and creating those delicious new recipes.

Why I chose to start with this muffin recipe?​ Very simple answer, because I had this recipe already ready waiting to be shared :) I have tested it a couple of times and was really happy with it and was just waiting for the right time to publish it. To be completely honest with you this started as a cupcake recipe and it still can be made into a cupcake recipe, I will tell you how :) To make these as cupcakes you want to leave the topping out so make only the batter. Then you can top the cupcakes with a delicious cream cheese topping like the one I used for my Pumpkin Cupcakes. But I must admit, they don't really need that as they are really delicious in a form of a muffin without any cream on top. Because of the apple sauce and the grated apple that go into the batter these muffins as super soft and moist and oh did I mention they are packed with flavour? :)

​usually time my baking to some family get togethers and I also made these for a Friday night dinner get together. The first reaction when I opened the box with cupcakes was "smells like Christmas" :) And yes, they smell exactly like Christmas, packed with those beautiful flavours from my Pumpkin Pie Spice. That is also what makes holidays so special to me, spending time with family, enjoying delicious food and enjoying the moments together. If a muffin can bring you even a bit of those feelings then it is this muffin :)

Before I go, for those allergic to nuts, the pecan nuts are not a must in this recipe and can be left out.​

RECIPE

Apple Muffins

Moist and flavourful muffins that fill your house with a beautiful autumnal scent

​INGREDIENTS

​

  • 85g soft butter

  • 100g brown sugar

  • 2 eggs

  • 210g flour

  • 1 ½ tsp baking powder

  • ½ tsp baking soda

  • 1 tsp pumpkin pie spice (recipe here)

  • 90g apple sauce

  • 1 medium apple

 

  • 1-2 medium apples

  • 30-50g chopped pecan nuts

  • 1 tsp pumpkin pie spice for latte (recipe here)

DIRECTIONS

​

  1. Cream the softened butter with the sugar in a medium bowl with a hand-mixer for a couple of minutes until it becomes creamy and pale.

  2. Add the eggs one at a time whisking for about half a minute in between each addition. If after you have added the second egg the mixture starts looking a little curdled, no need to worry about it, it will become creamy once you start adding the dry ingredients.

  3. In a separate bowl combine the dry ingredients and the pumpkin pie spice.

  4. Sift about half of the dry ingredients into the wet ingredients and mix shortly. Then add the apple sauce and mix again shortly. Now add the rest of the dry ingredients and mix until well combined and you don't see any dry spots of flour.

  5. Peel, deseed and grate an apple. Add the grated apple to the batter and fold in until combined.

  6. Lay a muffin tray with 12 paper muffin or cupcake liners and portion the batter into the muffin liners evenly using an ice cream scooper or a tablespoon.

  7. Peel, deseed and cube the apples for the topping and mix them in a small bowl with the chopped pecan nuts and the pumpkin pie spice for latte.

  8. Add the apple cubes and the pecan nuts on top of the muffins.

  9. Bake the muffins in 180°C bottom top heat in the middle shelf of the oven for about 25 minutes.

  10. Remove from the oven, allow to cool shortly and then remove from the muffin tray into the cooling rack and allow to cool completely. Store in an airtight container or in the fridge to keep fresh for longer.
