Oven Baked Portobello Mushrooms with Feta Cheese
A delicious starter, light lunch or dinner, or a snack
Raise your hand if you love easy and effortless meals. I love such meals, especially if this is not at the expense of the taste and that is definitely the case of these portobello mushrooms. The mushroom itself has a beautiful flavour and doesn´t require much to be added to it. The salty feta cheese balances well the flavour of the cheese and the herbs are like a cherry on top.

I don´t think it can get any simpler and faster than this. Mushrooms washed, drizzled with some flavourful olive oil, seasoned well and covered in some tasty cheese. Baked in the oven and that´s it! Simple as that :)

The smell is really tempting when you take the mushrooms out of the oven, but stay put and don´t bite in to the mushroom right away, as you will burn your mouth really bad. Give the mushrooms 10 minutes, get your plates pretty and then dig in.

Oven Baked Portobello Mushrooms
A delicious starter, light lunch or dinner, or a snack
​INGREDIENTS

4 big portobello mushrooms, washed

olive oil
-
salt
-
black pepper
-
fresh thyme
-
about 100g feta cheese
-
some parmesan cheese

DIRECTIONS

Drizzle an oven tray with some olive oil.

Remove the foot from the mushrooms and place the in the oven tray.

Drizzle some more olive oil on the mushrooms.

Season with salt, pepper and fresh thyme.

Crumble the feta cheese on the mushrooms, about 25g per mushroom.

Then grate some parmesan cheese on the mushrooms and season with some more black pepper.

Bake the mushrooms in 200°C in the middle shelf of the oven for 10 minutes. Then drop the temperature to 150°C and continue baking for another 10 minutes or until a fork pierces through easily.

Remove from the oven and allow to cool a little. Hot mushrooms can burn your tongue very badly.

Serve as a starter or as a side to any other meal.
